Lemon Green Tea Madelines
It’s Lemon-Fest week! Every year I celebrate my love of lemons by posting a new lemon recipe every day. This is the FIFTH year! Try out past recipes from 2009, 2010, 2011 and 2012 and check back every day this week for something new and lemony!

Green tea powder and sea salt just add a little kick to these already fragrant treats. I was always daunted at the thought of making madelines but my mom assured me they were easyto make…as she handed me her madeline pan. Hm. Subtle hint that someone wants cookies.
ingredients:
3/4 cup cake flour
1/2 teaspoon baking powder
1 Tablespoon lemon zest
Pinch of green tea salt
5 Tablespoons butter
1/2 cup sugar
2 eggs
1 Tablespoon lemon juice
1/4 cup powdered sugar
1/4 teaspoon matcha powder
I got this green tea sea salt from the Spice Station, one of my favorite little shops in Silverlake. I always find all kinds of amazing things to inspire me when I’m baking.
In a bowl whisk together the flour, baking powder, lemon zest and green tea salt. Set aside.
In the bowl of an electric mixer mix the butter, sugar and eggs.
Add the flour mixture until combined, then stir in the lemon juice.
Let the batter rest for 30 minutes.
Preheat the oven to 350 degrees, prep a Madeline Pan generously with butter.
Fill the pans 3/4 full and bake for 8-10 minutes.
Remove from pan and let cool on a wire rack.
Matcha Powder is concentrated green tea and LITTLE goes a long way. It can also be pricey but luckily there are lots of ways to use it!
Stir together the powdered sugar and matcha and lightly dust the madelines before serving.
