Lemon Honey Chicken
Of all my 5 years of Lemon Fest recipes, this one is my favorite. It’s incredibly easy and so tasty that the kids kept asking for more, that’s the ultimate dinner seal of approval!
Do you ever have those days when the afternoon seems to speed up, you start thinking about making dinner. Then 3 o’clock comes, suddenly 4 o’clock, then the ultimate 5 o’clock panic. Now it’s serious business. Avoid all that by marinating this chicken in the morning, then simply pop it in the oven and an hour later you’re ready to eat!
Crispy and juicy, this chicken is so easy you’ll want to make it every week. Keep a lemon and some honey in your pantry and you’ll always be one step ahead!
Lemon Honey Chicken
Ingredients:
6 chicken thighs
1/3 cup lemon juice
1/3 cup honey
lemon zest
salt and pepper
Instructions:
In a bowl stir together the lemon juice and the honey. In a freezer bag, pour the mixture over the chicken and refrigerate for 6 hours.
Preheat the oven to 350 degrees and prep a baking sheet with a wire rack.
Place the chicken on the prepped rack and discard the marinade. Season the chicken with lemon zest, salt and pepper.
Bake for one hour and serve.
True Lemon just came out with new seasoning blends — most notably Lemon Pepper, that is salt free and de-lish! Maybe something to have on hand when lemons aren’t available???
Wow its simple. I tried it at home, it was delicious. I used small size chicken breast to marinate for 4 hours in refregerator. Rest of the procedure, i followed you. Thanks for this great Lemon chicken recipe.
