Lemon Kiss Cookies
It’s Lemon-Fest week! Every year I take advantage of the over abundance of lemons and post lemon recipes all week. Check out 2009, 2010 & 2011. Yikes, this is the fourth year!

Lemon and chocolate go surprisingly well together and these tiny cookies will break your heart with cuteness.
I found these Hershey’s mini kisses and thought they were adorrrable. Bigger than a chip, smaller than a kiss they added just a touch of chocolate goodness to these cookies.
ingredients:
2 cups all-purpose flour
2 Tablespoons lemon zest
Pinch of salt
1 cup (2 sticks) butter, softened
1/2 cup brown sugar
1/2 cup sugar
2 eggs
1 teaspoon lemon juice
Hershey’s mini kisses
Preheat the oven to 350 degrees and prep baking sheets with silpats.
In a bowl, whisk together the flour, salt and lemon zest. Set aside.
In the bowl of an electric mixer, cream the butter, brown sugar and white sugar.
Add the eggs and lemon juice.
Carefully add the flour mixture until just combined.
Roll the dough into small 1″ balls and place on the prepped baking sheet.
Press the mini kisses into the middle of the balls. Bake for 8-10 minutes depending on your oven. Let cool on wire racks.

Yum. I love lemony treats. I bet this would be good with lemon curd in the middle too.
