Lemon Muddy Buddies

I love peanut buttery Muddy Buddies but now that my Kid has an aversion to peanut butter I thought I’d come up with a different way of presenting the sweet snack. A bounty of fresh lemons came my way and since I’ve been adding it to everything, I thought I’d try it in Lemon Muddy Buddies. Success! Lemon lovers will adore this sweet and crunchy, citrus treat!
Lemon Muddy Buddies
Ingredients:
4-1/2 cups Rice Chex cereal
2/3 cup white chocolate chips
2 Tablespoons butter
2-1/2 teaspoon lemon zest
1 Tablespoon lemon juice
pinch of salt
1-1/4 cup powdered sugar
Instructions:
In a saucepan over low heat melt the white chocolate chips, butter, lemon zest and lemon juice. Stir well until smooth and let cool slightly.
Toss the cereal with the melted chocolate mixture to coat.
In a freezer bag add half the powdered sugar and the salt. Add the cereal and shake in the bag to coat, then add the rest of the powdered sugar and toss again until all the cereal is covered in powdered sugar.
Spread onto a baking sheet to cool completely. Once cooled store in an airtight container.
