Lemonade Drop Scones
I’m always looking for ways to use lemon and even more lemon. Since I had an abundance of both lemonade and fresh lemons, I made up this recipe on the fly. Why are these called drop scones? Because when I mixed up the dough it was a little tackier than your average scone dough so instead of cutting it as you would a normal scone, I ‘dropped’ them like cookies. The round-ish shape gave them a cookie-like appearance with that same familiar scone softness.
These are delicious served warm with butter and whipped cream!
Lemonade Drop Scones
Ingredients:
2 cups all-purpose flour
1/2 cup white sugar
1 teaspoon baking powder
1/2 cup (1 stick) unsalted butter
1 egg, beaten
1/4 cup whole milk
1/2 cup lemonade
Zest of one lemon
Pinch of salt
Crystallized sugar
Instructions:
Preheat the oven to 400 degrees. Prep a baking sheet with a silpat or parchment.
In a large bowl, combine flour, sugar, and baking powder. Using your fingers or a pastry cutter, cut in the butter. Get it all together so it’s nice and crumbly.
Add the egg, milk and lemonade until combined, then mix in the zest.
Using two large spoons or a disher, scoop out and drop the batter onto the prepped cookie sheet and bake for 15 minutes. Serve warm.
I made macaroons that look remarkably like this. My kids ate the chocolate-dipped bottom, but H said, “I don’t like the rest of this scone.” Ha!

Those look amazing! Have you ever tried pulsing the dough in a food processor? I’m wondering if it will make the dough too tough.

I’d say that a food processor would mix it too much, then again I’m totally-Amish in that I do everything by hand.
I made these tonight and served them warm with lemon curd, blueberries and whipped cream. YUM! What a great and easy recipe. Thanks for sharing 🙂
The absolute best Honey Lemonade Recipe: 1/2 gallon warm water, 1/2 cup honey, 1/4 cup sugar, 1/2 cup fresh lemon juice. Just mix it all with your hands (their warmth will disolve the honey and sugar) and pour mixture into a gallon container filled 3/4 with ice. You can use orange blossom honey to get an awesome citrus flavor.

I think ur dilemma is perfectly normal, even at some point you may lubricate too much, it’s part of being a girl, but just in case you want to make sure, before starting to fool around, you should use some lubrification so you stay wet all along.
