Lychee Chicken
It took me a long time to come around to lychee. Blame it on the fact that lychee reminds me eyeballs. They’re just weird looking. Close your eyes and look past the weirdness and you will be handsomely rewarded by the sweet, fruity taste.
Lychee is a fragrant tropical fruit. You can get it fresh or in a can in the Asian section of your market. By crushing up the lychee, you get a nice, fruity marinade that’s a perfect compliment to chicken.
The chicken is moist and has just a subtle hint of the fragrant lychee. Served with rice, this is a nice easy to make dinner , something different for your typical weeknight meal.
Lychee Chicken
Ingredients:
8 chicken thighs
1 (15 oz) can lychee, drained, and rough chopped
1/4 cup soy sauce
1-1/2 tablespoons mirin
1 tablespoon brown sugar
2 cloves garlic, minced
1 slice ginger
Instructions:
Step 1: Place the chicken in a sealable bag, along with the smashed lychee, soy sauce, mirin, brown sugar, garlic, and ginger. Seal and marinate in the refrigerator for 6-8 hours.
Step 2: Preheat oven to 375 degrees and prep a baking sheet with a wire rack.
Step 3: Place the chicken onto the rack, discarding the marinade.
Step 4: Bake for 50 minutes, or until juices run clear.

This looks delicious! Never thought of cooking with Lychees! Have a can or two just sitting in the pantry. So I will have to give this a try! Hopefully it works just as well with drumsticks 🙂 Thanks for sharing!
