Lychee Tea Chicken
My friend Deb always gives me good food omiyage when I see her. Last year she gave me artisan marmalade which I made into Hello Kitty hand pies. This time around I got some nice Teance loose leaf Lychee Tea!
Now, you’d think ‘hey, iced tea’ but that’s not where my brain stops, I thought the flavorful tea would lend itself to a tasty chicken dish. The fragrant lychee plus a little soy and sugar cooking all day in the crock pot makes a nice pulled chicken with an almost kalua pork-like texture. Lychee Tea Chicken
Ingredients:
1 whole chicken fryer, pieces
1 cup brewed lychee tea
1/4 cup soy sauce
1 teaspoon sesame oil
2 cloves garlic, minced
2 Tablespoons brown sugar
salt
pepper
Instructions:
If your tea is loose, brew the tea first to prep. Then pour one cup.
In a bowl combine the tea, soy sauce, sesame oil, garlic and brown sugar. Season with salt and pepper
Place the chicken pieces in the bottom of a crock pot and pour the sauce on top. Cover and set to low and cook 6 hours.
Pull the bones out and discard before serving.
