Mac ‘n’ Cheese
This is my basic Mac ‘n’ Cheese recipe. It’s pretty verastile in that you can use it o make even more dishes. Expand your idea of mac ‘n’ cheese! Lean into savory and make a large Mac ‘n’ Cheese Pie or go bite-size and make delicious Mini Pot Pies. Of course the tried and true, just eating it by the spoonful, well that’s pretty good too.
Mac ‘n’ Cheese
Ingredients:
1 pound small pasta (elbows or shells)
2 Tablespoons butter
3 Tablespoons all-purpose flour
1-1/2 cups whole milk
1/2 cup heavy cream
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
Freshly ground pepper
1-1/2 cups cheddar or jack cheese
Instructions:
Bring a large pot of water to a boil and cook the pasta according to directions. Drain, do not rinse.
In same large pot, melt the 2 Tablespoons of butter over medium heat. Add the flour and stir constantly until combined, for 2 minutes.
Add the milk and heavy cream and bring to a boil for 2 minutes. Turn off the heat and stir in the mustard, paprika, garlic powder, salt, and pepper. Add the cheese and stir until thickened and combined.
Fold the pasta into the cheese sauce until fully coated. Serve immediately!

non cooker, here. Is the pound of pasta pre-cooked? Also, how much does this make? It’s gotta be alot. Can I freeze it? 🙂
