Maple Oatmeal Cookies
When he was younger my kid used to be allergic to chocolate. Thankfully that has passed but during that time I came up with a lot of lovely vanilla and maple recipes. It got to so I didn’t even miss chocolate…hm, not really Still those recipes stuck with us and I continue to make them for him to this day.
Maple Oatmeal Cookies
Ingredients:
1 cup all-purpose flour
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
1 stick butter, softened
1/2 cup packed brown sugar
1/4 cup white sugar
1 large egg
2 tablespoons maple syrup
1 teaspoon vanilla
1-1/2 cups old-fashioned oats
Instructions:
Step 1: Preheat oven to 350 degrees. Prep baking sheets with parchment or silpats.
Step 2: In a bowl, whisk together flour, cinnamon, baking powder, baking soda and salt. Set aside.
Step 3: In the bowl of an electric mixer, cream the butter, brown sugar, and sugar, until light and fluffy.
Step 4: Stir in the egg, maple syrup, and vanilla.
Step 5: Stir in the dry ingredients until just combined.
Step 6: Lastly, stir in the oats.
Step 7: Drop by tablespoons onto the prepped baking sheets, flattening slightly.
Step 8: Bake until slightly brown but soft in center, 12 to 15 minutes, depending on your oven. Let cool on a wire rack.
this is a dangerous recipe because i tend to have all those ingredients on hand at all times! cookies that are easy to pull together are a mixed blessing 🙂
