Cream Cheese Brownies
Regular brownies? Please. If we’re going to indulge let’s go all the way. Why not take regular brownies over the top and top them with a luscious cream cheese mixture? Swirled right in, the cream cheese layer adds even more dimension making these brownies both beautiful and delicious.
Having a bad day? Brownies will fix that. Having a good day? Brownies will make it even better.
Cream Cheese Brownies
Ingredients:
chocolate mixture ingredients:
1/2 cup (1 stick) unsalted butter
8 ounces semi-sweet chocolate chips
1 cup sugar
3 large eggs
1/2 teaspoon vanilla
1 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
pinch of salt
cream cheese mixture ingredients
8 ounces cream cheese, softened
1/3 cup sugar
1 large egg
2 Tablespoons all-purpose flour
1/2 cup mini chocolate chips
Instructions:
Preheat oven to 350 degrees. Prep a 9 inch square baking pan by lining it with buttered parchment paper.
In a double boiler, melt the butter and chocolate until fully melted. Let cool. Once the chocolate mixture has cooled add the sugar, eggs and vanilla.
In a bowl, whisk the flour, cocoa powder, baking powder and salt. Make a well in the center and add the chocolate mixture, stirring until just combined.
For the cream cheese mixture, in a bowl stir together the cream cheese, sugar, egg, flour and mini chocolate chips.
Pour the chocolate batter (saving one cup) into the prepared pan. Spoon the cream cheese mixture over the chocolate, then dollop the reserved one cup of chocolate batter on top. Using a knife, swirl the cream cheese mixture on top.
Bake for 50 minutes depending on your oven, until a toothpick test comes out clean. Let cool and cut into squares.
I made these last night. Wow! Definitely worth the effort!
Hubby who claims not to like brownies just took a little chunk and went back for more. He said “Why didn’t you tell me these were so good?”.
I made one minor alteration: I didn’t use a whole stick of butter. I just couldn’t. I used half and they were still great!
