Marshmallow Frosting
This is sticky, and sweet – obviously, just like a melted marshmallow. The kids love it, but cleanup is a bitch.
ingredients:
1 Tablespoon milk
3 Tablespoons sugar
half a bag of marshallows (approx 6 oz)
1 Tablespoon boiling water
1/4 teaspoon vanilla extract
In a tiny sauce pan on VERY LOW heat, warm the milk and sugar. Make sure it doesn’t boil over, you just want to heat it up.
In a double boiler, melt the marshmallows. When they start to soften, add the boiling water and stir.
Remove from the heat. In your mixer bowl pour the melted marshmallow in as well as the vanilla and beat. Beat in the melted milk/sugar until cooled.
I find that using an offset spatula is the best method for frosting this stuff because it is very very sticky.
Aw man – that marshmallow frosting looks so good! I like how it looks so smooth on the top of the cupcake. I’m surprised it isn’t used more often (hmm, maybe the clean-up as you say?). I don’t mind, I’ll make my husband clean it up, hahaha. I can’t wait to try this.
