Mascarpone Brownies
Is mascarpone rich enough for you? Why not go the distance and add a layer of ganache on top.
This is obviously a heavy recipe but once you’ve tried them you’ll wonder where they’ve been all your life. Mascarpone Brownies are everything you imagined, chocolately, decadent and life changing.
Mascarpone Brownies
Ingredients:

1 cup (2 sticks) unsalted butter
1/4 cup chocolate chips
1 cup sugar
1/2 cup Mascarpone cheese
2 Tablespoons coffee
1 teaspoon vanilla
3 eggs
1/2 cup all-purpose flour
1/2 cup cocoa powder
pinch of kosher salt
Ganache ingredients:
6 ounces semi sweet chocolate chips
2/3 cup heavy cream
2 Tablespoons butter
1 teaspoon vanilla
Instructions:
Preheat oven to 350 degrees. Line an 8×8 pan with buttered parchment paper, letting the sides overlap. Set aside.
In a saucepan on medium, melt the butter and chocolate chips, stirring until combined.
In the bowl of an electric mixer, stir together the sugar and the melted butter/chocolate mixture. Add the mascapone, coffee, vanilla and eggs. Stir until smooth.
In a separate bowl whisk the flour, cocoa and salt. Carefully add it to the chocolate mixture, stirring until just combined.
Pour batter into the prepped 8×8 pan. Bake for 40 minutes or until a toothpick test comes out clean. Let cool in the pan.
While brownies are cooling, make the ganache. In a double boiler, melt the chocolate chips, heavy cream and butter, stirring until smooth. Stir in the vanilla. The ganache should be glossy when ready.
Pour the ganache over the brownies in the pan and let set.
Using the parchment, lift the brownies out of the pan and cut to serve.
Those look absolutely amazing!!! I’m afraid to make them because I could definitely eat every last one by myself, but I guess I’ll just have to take that risk!

These look amazing! Are these more cake-like brownies or are they more fudge-y? I like my brownies cakier. Can I alter the recipe to get this effect? Different amount of eggs?

I just made these and it was a lot simpler than I thought it would be. I think I made the ganache too runny. I must have added too much of something.

I was so excited to try this recipe but for some reason my brownies came out flatter and more cakey than the picture! What are your tips for fudgy brownies that are dense and moist like your picture??

The recipe refers to adding eggs but they are not listed in the brownie ingredients. How many eggs?

Hm the eggs are there, it may not have listed the ingredients in the correct order. It looks to be fixed now.
