Matcha Mochi cupcakes
Mochi anything I’ll take it! And adding matcha to a mochi cake gives it extra color and flavor that is simple and delicious.
ingredients:
1 pound (1 box) mochiko
2 teaspoons baking powder
1/2 teaspoon salt
2 Tablespoons matcha powder
1 cup (2 sticks) butter, melted
2 cups sugar
1 (12 ounce) can evaporated milk
1/2 teaspoon vanilla
4 eggs
Preheat the oven to 350 degrees. Prep cupcake pans with liners. (will make approx 24)
In a medium bowl whisk together the mochiko, baking powder, salt and matcha powder. Set aside.
In a separate bowl stir together the melted butter and sugar. Add the evaporated milk, vanilla and eggs.
Add the egg mixture to the dry ingredients and mix well.
Spoon the batter into the prepped baking cups. Bake for 15-17 minutes depending on your oven.
Let cool on a wire rack, frost and serve!
