Meatball Pastina Soup

Pantry essentials will save your life. Always keeping chicken broth and pasta on hand means you can come up with dinner in an instant.

Pastina is my favorite pasta to use in soup because it’s small. Instead of large pieces of pasta overwhelming the soup, pastina adds a just little heft and texture. I cook meatballs ahead and keep them in my freezer for meat emergencies, who hasn’t had a meat emergency. The meatballs combined with the pastina is just the right combination to make a soup into a hearty dinner.

This Meatball Pastina Soup is quick to make and will feed hungry kids who can’t wait to eat!

Meatball Pastina Soup

Ingredients:

2 (14 ounce) cans chicken broth
2 cups water
1 clove chopped garlic
1 teaspoon oregano
1/2 teaspoon onion powder
1/8 teaspoon paprika
2 cups meatballs
1/2 cup corn
1/4 cup pastina (tiny pasta)

Instructions:

In a large pot add the chicken broth and water and bring to a boil.

Add the chopped garlic, oregano, onion powder and paprika.

Then add the meatballs, corn and pastina.

Cook until the pastina is softened and serve hot.
