Mickey Mouse 3D Cookies

I’m a long time Disney fan, I visit the parks about once a week and Disneyland is like a second home to me. Disneyland and WDW do a great job of making inspired Disney sweets for their parks and hotels and now and then I like to make my own Disney treats at home too!

As Disney fans know, November 18th is Mickey Mouse’s birthday! To celebrate I thought it would be fun to make a simple black and white Mickey Mouse cookie, an homage to his start in animation in Steamboat Willie. Black and white equals chocolate and vanilla in my eyes, so a double flavored cookie it is!

The new fad in cookie baking is 3D cookies and I’ve started to collect a lot of fun cutters. Like the 3D Hello Kitty cookie, I got this adorable 3D Mickey Mouse cookie cutter from Japan. I love how happily he sits straight up, a line of these would look great for a Disney themed party. Like with most Mickey Mouse treats, always start with the chocolatey ears first! Happy Birthday, Mickey Mouse!

Ingredients:

chocolate cookie ingredients:
3 cups all-purpose flour
1/4 cup cocoa powder
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup (2 sticks) butter
1 cup sugar
1 egg

vanilla cookie ingredients:
3 cups flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
1 cup (2 sticks) butter, softened
1 cup sugar
1 egg

Instructions:

For both doughs, follow these same directions: whisk the dry ingredients together in a bowl and set aside.

In the bowl of an electric mixer cream the butter and the sugar. Add the egg and vanilla.

Slowly add the dry ingredients and mix well, when the dough pulls away from the side of the mixing bowl, it’s done.

Wrap the dough in plastic wrap and refrigerate.

Preheat the oven to 350 degrees and prep a baking sheet with silpats.

Make sure you always dip cutters in flour before each use. First roll out the vanilla dough to about 3/8 of an inch. You want a fuller dough so that you can capture all of the detail.

Press the cookie cutter all the way down to get a clean impression.

Transfer to the prepped sheets and using a paring knife, cut around and discard the areas that will be “black”. Roll up the discarded dough and keep making the vanilla areas of the Mickeys.

Now roll out the chocolate dough to 3/8 of an inch. Cut along the same areas, this time moving the missing areas to the baking sheets to complete the Mickey.

Line up the chocolate and vanilla pieces as close together as possible, and when it bakes it will come together in one piece. Don’t forget to cut out the feet, and place them separately on the baking sheets.

Bake for 10 minutes and let cool on a wire rack.

Once cooled, place the body into the feet and stand up your happy little 3D Mickey.
