Mickey Mouse Gingerbread Cookies

I already bake like crazy all year but during the holidays I go into overdrive. I love making holiday cookies for my friends and I always try to incorporate Disney into my treats. At Disneyland they sell a gingerbread mix that comes with an adorable Mickey Mouse gingerbread cookie cutter. Truth be told I’m not a fan of the mix but the cutter has quickly become one of my favorites, because of its simplicity you can add any details you like.

A few snowflake sprinkle buttons, a homemade bow tie out of heart sprinkles and this little Mickey gingerbread mouse is ready to celebrate the holidays!

Mickey Mouse Gingerbread Cookies

Ingredients:

you’ll need:
Mickey Mouse gingerbread cookie cutter
black icing
pink icing
white icing
snowflake sprinkles
large heart sprinkles
small heart sprinkles

cookie ingredients:

1 cup (2 sticks) unsalted butter, softened
1 cup brown sugar
3 cups all-purpose flour
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon baking soda
pinch of salt
1 egg
3 Tablespoons molasses
1-1/2 teaspoons vanilla

Instructions:

In a medium bowl whisk together the flour, ginger, cinnamon, nutmeg, baking soda and salt. Set aside.

In the bowl of an electric mixer cream the butter and brown sugar until combined.

Add the egg, molasses, and vanilla, then slowly add in the dry ingredients just until the dough comes together.

Split the dough into two and wrap in plastic wrap. Chill until you are ready to use.

Preheat the oven to 350 degrees. Prep baking sheets with silpats or parchment paper.

Roll out the dough to about 1/4 inch thick. Flour the cutter, then cut out the shapes and transfer onto the prepped baking sheets.

Bake for 10 minutes, let cool on a wire rack.

Using the black icing and a #4 tip, pipe Mickey’s eyes, nose, and mouth. Use a #4 tip and pink icing for his two cheeks.

With the white icing and a #4 tip, pipe two dots on his stomach and add the snowflake sprinkles for buttons. Use the icing at the neck area to adhere two large heart sprinkles sideways, points facing. With more icing place a small heart sprinkle for the center of the bow tie.

Use the white icing to add ear, hand, and foot details, as you like.

Once the icing is dry, go back in with the white icing and pipe a line across the dress for the belt. Sprinkle the piped line with silver sprinkles. Let dry completely.

When the icing is dry the cookies are ready to serve.
