Milk Tea Coffee Cake
Sometimes you just want cake. A good cake can change your whole mood from sadness to happiness in one big bite. Comforting flavors make all the difference and you can find them in the most unexpected places.
I forgot I bought a can of milk tea and I thought instead of drinking it, I’d turn it into a nice morning coffee cake. I bake with tea a lot but I usually steep my own. Why I’ve never thought to just use a pre-made can is beyond me, it’s so easy. Just pop the top and you’re ready to go.
This cake is pure comfort. Serve it with a side of whipped cream and fresh fruit and your spirits will be lifted in no time.
Milk Tea Coffee Cake
Ingredients:
For the cake:
2 cups cake flour
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter
1-1/2 cups sugar
2 large eggs
1-1/2 teaspoons vanilla
1 cup milk tea
For the crumb:
3/4 cup brown sugar
1/3 cup flour
6 tablespoons unsalted butter, diced
Instructions:
Step 1: Preheat the oven to 350 degrees. Prep a 9×13 pan with buttered parchment. Set aside.
Step 2: In a bowl whisk together the cake flour, all purpose flour, baking powder, cinnamon, and salt. Set aside.
Step 3: In the bowl of an electric mixer cream the butter and sugar.
Step 4: Add the eggs and the vanilla, until just combined.
Step 5: Stir in the dry ingredients, alternating with the milk tea.
Step 6: Pour the batter into the prepped pan, spreading evenly.
Step 7: In a small box cut the butter into the brown sugar and flour to make the crumb.
Step 8: Sprinkle the crumb over the batter.
Step 9: Bake for 50 minutes, until a toothpick test comes out clean.
Step 10: Let cool, cut into squares to serve.
