mini Donut Muffins

This recipe is simply…fantastic. It’s a one bowl recipe, which means even the Kid can do most of it himself because the steps are so simple. They are soft and sweet and the cinnamon sugar topping fools you into thinking you are eating a fresh donut. Sure you can make them regular sized but I love them mini.

ingredients:
2 cups all-purpose flour
2/3 cups sugar
2-1/2 teaspoons baking powder
pinch of salt
1/4 teaspoon nutmeg
1 egg
1 cup whole milk
5 tablespoons butter, melted (cooled)
1 teaspoon vanilla

cinnamon sugar topping:
2 Tablespoons butter, melted
6 Tablespoons sugar
1 teaspoon cinnamon

Heat the oven to 375 degrees. Line the cups of a mini muffin tin with liners – this should make about 30 mini muffins.

In a bowl, whisk together the flour, sugar, baking powder, salt and nutmeg. Set aside.

In another bowl, whisk the egg, milk, butter and vanilla.

Make a well in the dry ingredients and pour in the liquid. Mix until just blended. Spoon into the prepped mini muffin cups.

Bake for 10-12 minutes depending on your oven, until a toothpick comes out dry. Let cool on a wire rack.

Prepare the topping by stirring the cinnamon and sugar together in a bowl.

Working one muffin at a time, dip the tops in the melted butter, then the cinnamon sugar, rolling to cover the muffin top.

The mini-ness is adorable but dangerous. You’ll find you can’t just eat one…

    When I tried them as regular sized muffins, they came out perfectly. When I tried them as minis, the bottoms stuck to the liners… I’m a novice baker… do you know why this happened? Am I cooking them too long?

    I made them just now and ate a few…they were so simple to make and yummy! Unfortunately, my son just licked the tops off, but he really enjoyed himself, so it was worth it. He is more of a chocolate fan, at 22 months.

    I only discovered your blog last night when I Googled “baked corn dogs”, and I am hooked. Is there a way I can find out more about your story? I grew up in Hawaii and wondered if you did too, seeing that you have an affection for the King’s Bakery sweet bread. We used to go eat at the old restaurant all the time…I’d have the French bread and I think it was my mom who would have the fried saimin.

    I am so excited that this blog exists, and I can’t wait to try more of your recipes!
