vegan Mexican Hot Chocolate Cupcakes

Mexican Hot Chocolate is smooth and cocoa-chocolatey with just a touch of cinnamon spice. Believe it or not these cupcakes are vegan but you wouldn’t know it because they are oh so flavorful. I make them mini so I can get the perfect ratio of icing to cupcake.

ingredients:
14 ounces hot water + 2 heaping teaspoons of instant coffee
2-1/2 cups all-purpose flour
1-1/2 cups sugar
1/2 cup cocoa powder
2 teaspoons baking soda
1 teaspoon cinnamon
pinch of salt
2/3 cup oil
3 Tablespoons white vinegar
1 Tablespoon vanilla

Vegan Cinnamon icing ingredients:
1/2 cup silken tofu
3 C. powdered sugar
3 Tablespoons soy milk
1 teaspoon cinnamon
1 teaspoon vanilla

Preheat the oven to 350 degrees and prep a cupcake pan with liners.

Stir together the water and the instant coffee. Set aside to cool slightly.

In a bowl whisk together the flour, sugar, cocoa powder, baking soda, cinnamon and salt.

Stir in the oil, vinegar and vanilla. Add the instant coffee mixture and stir well.

Spoon the batter into the prepped liners. Bake at 350 degrees for 10-15 minutes for minis or 15+ minutes for regular sized cupcakes. Let cool on a wire rack.

While the cupcakes are cooling, start the icing. Beat the silken tofu, adding the powdered sugar slowly. Add the soy milk, cinnamon and vanilla. Speed up the mixer and beat until fluffy. Frost the cupcakes and serve.

    Oh my gosh, I am SO going to make these! I have an obsession with Mexican chocolate, but surprisingly prefer Abuelita (Nestles) over Ibarra. And you’re absolutely right about cinnamon making things taste better–I even add it to my coffee grounds and my spaghetti. Where did you get the cute sunflower cupcake liners?
