Mini Orange Cupcakes with Vanilla Glaze
January provides the most beautiful citrus here in Southern California and I like to take advantage of it by baking with it as much as possible.
Instead of going with a typical lemon flavor, I thought orange would be light and citrus-y. With just a touch of vanilla glaze, these mini cupcakes are the perfect size to pop in your mouth…one…after the other…
Mini Orange Cupcakes with Vanilla Glaze
Ingredients:
cupcake ingredients:
1/2 cup (1 stick) unsalted butter
1 cup sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon almond extract
1-1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup whole milk
2 Tablespoons orange juice
1 Tablespoon orange zest
vanilla glaze:
1/3 cup powdered sugar
1-1/2 Tablespoons whole milk
1/2 teaspoon vanilla
Instructions:
Preheat oven to 350 degrees. Prep a mini cupcake pan with liners.
In a bowl whisk the flour, baking soda and salt. Set aside.
In a mixer cream the butter and the sugar.
Add the eggs, one at a time until blended then stir in the vanilla and almond extracts.
To the butter mixture, alternate the flour mixture and the milk. Finally stir in the orange juice and the orange zest.
Fill the lined cupcake pan, the recipe should give you 24 mini cupcakes.
Bake for 10 – 12 minutes depending on your oven, let cool on a wire rack.
In a small bowl stir the powdered sugar, milk and vanilla. Adding more milk if necessary to get a nice runny consistency.
Once the cupcakes are cooled, drizzle with glaze.
I made these and they were SO very good! The vanilla glaze is just the PERFECT topper for these, I think, even if I kind of drenched them in it. 🙂 Thanks again for all these wonderful recipes!
