Mocha Matcha Cupcakes

My friend Deb is a cartoonist – her strip “Bento Box” is currently running in the Honolulu Star Advertiser. I am lucky to have friends that love comics and food as much as me and when they come bearing gifts, I always know it’s going to be good!

Back in July at SDCC Deb stopped by my table and gave me a can of Matcha cocoa. Very cool stuff! The minute she put it in my hand I knew exactly what I was going to do with it, cupcakes it is!

Mocha Matcha Cupcakes

Ingredients:

1 cup (2 sticks) unsalted butter
2 cups sugar
2 eggs
1 teaspoon vanilla
1 cup buttermilk
1/2 cup cocoa powder
3 Tablespoons Matcha cocoa
2 cups all-purpose flour
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup coffee

chocolate frosting

Instructions:

Preheat oven to 350 degrees. Prep a cupcake pan with liners.

In a medium bowl whisk together the flour, cocoa powder, matcha cocoa, baking powder, baking soda and salt.

In the bowl of an electric mixer cream the butter and sugar until fluffy.

Add the eggs, one at a time. Then the vanilla.

Alternating the flour mixture and the buttermilk until combined. Add in the coffee.

Pour the batter into the prepped liners. Bake for 15-20 minutes depending on your oven. Let cool on a wire rack.

Frost with chocolate frosting and serve!

    Wondering if you can use this matcha chocolate on other recipes that have cocoa or would you use in combination. I was thinking of the chocolate crinkle cookies I make at xmas. I looked for this stuff online and it was hard to find. It comes from Canada and looks like you can only order from the company directly.

    I had to email them about shipping charges. It’s $15 shipping if I buy 3 cans. Do you think this will keep if I get extra? I’m thinking some of my my baking buddies will want some. I mentioned I saw their product on one of my favorite blogs and they wanted to know the blog. Is it okay to tell them?

    @Wendy It would be a great addition to cocoa recipes! There are expiration dates on the cans but it should keep for a while.
