Mochi Filled with Speculoos Cookie Butter Chocolate

Ah, mochi. When I’m hungry, it’s there. When I’m happy, it’s there. When I’m tired, I use it as a tiny sugary pillow to rest my head. Ok maybe not that last part but that is a weird dream that also sounds delicious.

With mochi always on my mind, you’d think I’d have run out of ideas when it comes to rice flour but no, I’m just getting started. I always like to change up the flavors, (red bean mochi) is great, but what about Nutella mochi?

This time the highlighted ingredient was everyone’s new fave: Speculoos also known as Cookie Butter. Trader Joe’s now makes chocolate candy bars that are filled with just the right amount of cookie butter and I knew that encasing that in mochi would be the ultimate in decadence. I was right, when paired with fresh sweet mochi it was the perfect sweet, melty goodness that leaves you dreaming of another. Sweet, dreamy pillows.

Speculoos Filled Mochi

Mochi Filled with Speculoos Cookie Butter Chocolate

Ingredients:

3-1/2 cups water
1 cup sugar
1/4 tsp food coloring
1 box (16 ounces) mochiko
Dark Chocolate Speculoos Cookie Butter candy
potato starch

Instructions:

Step 1: Ready a large clean surface by sprinkling liberally with potato starch.

Step 2: In a large pot, boil the water and the sugar until the sugar is dissolved. Add the food coloring and stir.

Step 3: Pour in the mochiko and stir rapidly. Work fast, stirring constantly. The mochi will become stiff. Once the mochi is smooth, remove and place onto the potato starch prepped surface. Be careful as the mixture is very hot and very sticky. Sprinkle with more potato starch.

Step 4: Pull off golf ball-sized pieces, flatten out, then add a piece of Speculoos chocolate candy to the center. Pull up the corners, pinching to close. Continue until all the mochi is used.

Step 5: Mochi should be served immediately, will keep for only 1-2 days.

    If we wanted the mochi to be a certain shape (say… Hello Kitty’s head?) how would we do it? I’m researching treats to make for my daughter’s birthday in June (still a ways away, but you know how things like to sneak up on us!)
