Mochi Waffles *moffles

Moffles sounds like a cross between a waffle and a Muppet, but it’s when you take mochi and cook it in a waffle maker to a crisp golden brown. It’s absolutely delicious but sometimes you want something that resembles an an actual WAFFLE. So I made up some waffle batter but changed the ingredients to add mochiko. What I got was a crispy waffle with a mochi chew, not too far off the waffle path and perfect for brunch. It tastes better in a Hello Kitty waffle maker, for sure.

Mochi Waffles *moffles

Ingredients:

1 cup all-purpose flour
1 cup mochiko
2 Tablespoons sugar
3 teaspoons baking powder
1/4 teaspoon salt
1-1/2 cups whole milk
2 eggs
1 teaspoon vanilla

Instructions:

Prep your waffle iron by greasing it generously with butter. The mochiko makes this batter very sticky, so you want to make sure you can get them out.

In a bowl whisk together the flour, mochiko, sugar, baking powder and salt.

Make a well i the center of the dry ingredients, then add the milk, eggs and vanilla until just combined.

Pour batter into the prepped waffle maker, and cook until golden brown.

    Have to make these. When you said “familiar Mochi chew” that’s when I said “Uh yeah, where can I get me some Mochiko? I’m thinking Mitsuwa must have it.” Yes?

    As I was thinking about these waffles last night (yes, I am that lame), it reminded me of a treat that I love. Jenn, not sure if you’ve ever been to Japan or Taiwan, but they have this donut chain called Mister Donut in Asia. Their signature donut is a bread-ish, chewy, mochi-ish donut that is to die for. These remind me a lot of those donuts.

    Looks good! This reminds me of a traditional Japanese treat called “taiyaki” except yours has a hello kitty twist! Here’s the article about “taiyaki” on wikipedia:

    we just made these with a sprinkling of chopped ghiradelli 60 % cacao chocolate chips, which kicked it up a notch… rave reviews from 5- and 7- year old gourmets… considering stir-ins like matcha powder or black sesame…

    btw, mr. donut green tea version is to die for!…

    I just made this with almond milk because I didn’t have any whole milk and it tasted amazing still! It got cold while I was cooking (I have a tiny waffle iron and it takes forever lol) and putting the finished waffle in the toaster made it just as crispy as when it was done. Thank you so much! This is such an easy recipe and so delicious! Time to invest in a Grogu waffle iron ?
