Monster Cookie Bars

Making cookies can be therapeutic, but sometimes even just scooping them can be too much. That’s where cookie bars come in to save the day! Pressing all the dough in a pan and calling it a day is more than enough work. You deserve…a cookie!

Monster cookies are filled with oats, chocolate, and candy but traditionally, they also have peanut butter or some sort of peanut butter candy. But when coming up with recipes for people dealing allergies, sometimes you have to change things up. This still has more than enough flavor and candy to go around, and you won’t miss a thing.

These bars are perfect for sharing, so stack ’em up and pass them out!

Monster Cookie Bars

Ingredients:

1 cup (2 sticks) unsalted butter
1 cup brown sugar
1/2 cup white sugar
2 cups all-purpose flour
2 cups rolled oats
1 teaspoon baking soda
1/2 teaspoon cinnamon
Pinch of salt
2 eggs
2 teaspoons vanilla
1 cup chocolate chips
1 cup M&Ms (divided)

Instructions:

Step 1: Preheat the oven to 350 degrees. Prep a 9×13 pan with greased parchment.

Step 2: In the bowl of an electric mixer cream the butter, brown sugar, and sugar.

Step 3: In a bowl whisk together the flour, oats, baking soda, cinnamon, and salt. Add it to the butter and sugar mixture until just combined.

Step 4: Stir in the eggs and vanilla.

Step 5: Fold in the chocolate chips, and half the M&Ms.

Step 6: Press the dough into the prepped pan. Sprinkle with the rest of the M&Ms.

Step 7: Bake for 25-30 minutes.

Step 8: Let cool completely, then cut into squares to serve.
