Monsters U Mike ice cream sandwiches

Monsters Inc. was one of my favorite of the Disney/Pixar movies. I loved the world they created, the cool architecture of Monstropolis and the fun environments that were uniquely monsterous. And honestly, it made monsters less scary to me. I used to fear monsters in my closet or under my bed as a child and…sometimes as an adult.

Now the Monsters are back, as in – back in time! We get to see a young Mike and Sulley as they enter college and become frenemies. More monsters, more scare tactics and more fun! I decided to make the kids some treats to get them into the collegiate spirit of Monsters University!

Pixar is known for their ‘eyes’ and Mike is a great character to transform into sweets because he’s simple and recognizable! I made some green tea cookies and decorated them to be an homage to Mike, then filled them with creamy ice cream. These cookie eye-scream sandwiches are a monsterously delicious treat to enjoy this summer!

Monsters U Mike ice cream sandwiches

Ingredients:

you’ll need:
white candy melts
blue sparkle gel
chocolate pearls
vanilla ice cream

cookie ingredients:
3 cups all purpose flour
1 teaspoon baking powder
pinch of salt
1 Tablespoon matcha (green tea powder)
1 cup (2 sticks) butter, softened
1 cup sugar
1 egg

Instructions:

In a medium bowl whisk together the flour, baking powder, salt and matcha. Set aside.

In the bowl of an electric mixer beat the butter and sugar until combined. Add the egg.

Slowly add in the flour until it is incorporated. The dough will form quickly, and when it starts to pull away from the bowl it’s done.

Split the dough into two and wrap in plastic wrap. Chill until you are ready to use.

Preheat your oven to 350 degrees. Prep baking sheets with silpats or parchment.

Roll the dough to about 1/4 inch thick.

Use a 2″ round biscuit cutter to cut out the shapes and transfer onto the prepped baking sheet.

Bake for 8-10 minutes depending on your oven. Let cool on a wire rack.

Once the cookies are cool use a little frosting to hold a white candy melt in place on the cookie. Mike’s eye is slightly offset, so I placed the melts near the top of the cookie.

Add a drop of blue sparkle gel, then place a chocolate pearl in the center.

Turn over a plain cookie and add a scoop of vanilla ice cream, then place a decorated cookie on top to complete the sandwich.
