My Melody – Almond Pound Cake
I’m excited to announce that the wonderful folks at Sanrio asked me to collaborate with them and provide a special recipe for Almond Pound Cake!
After all, everyone knows Almond Pound Cake is My Melody’s favorite food, right? Here’s the best part, my recipe will be printed on cards that will be available in Sanrio stores today for National Pound Cake Day!
My first job was at a Sanrio store and as a huge Hello Kitty fan I have vintage items from the 70s and lots of cookware for my everyday inspiration. My Melody has always been one of my faves, she was one of the original characters released way back in 1975 and I’ve collected so many of her featured products over the years.
Celebrate the day with pound cake and pick up one of the recipe cards which are available in Sanrio stores across the country today!
My Melody – Almond Pound Cake
Ingredients:
1-1/2 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup (1 stick) butter
4 oz cream cheese
1-1/2 cups sugar
3 eggs
1 teaspoon almond extract
1/4 teaspoon vanilla
1/2 cup sliced almonds
1 Tablespoon brown sugar
Instructions:
Preheat the oven to 350 degrees. Prep a 9x5x3 loaf pan with buttered parchment. Set aside.
In a bowl whisk together the flour, baking soda and salt.
In the bowl of an electric mixer, cream the butter, cream cheese and sugar.
Add the eggs, one at a time until combined. Add in the almond extract and vanilla.
Slowly add the flour until the mixture is just combined.
Pour evenly into the prepped pan. Sprinkle the top with the brown sugar, then the sliced almonds.
Place the loaf pan on a baking sheet and bake for 60+ minutes (depending on your oven), until a toothpick inserted into the center of the cake comes out clean.
Let cool slightly in the pan, then use the parchment to pull the cake out and let cool completely on a wire rack. Slice and serve.

I tried this pound cake recipe after my hubby brought home the card he picked up while shopping at a Sanrio store. It was AWESOME and we couldn’t stop raving about it. However, I did tweak the recipe by cutting the sugar to 1 cup, using 3/4 tsp. almond extract (and omitting vanilla) and adding 1/2 tsp. baking powder. Fabulous crumb and texture, super moist, and great almond flavor. Thanks, Jenn!
