Nutella Ice Cream Pie

Nutella is quite an inspiration to me. From Pies on a Stick, to mochi, to pancakes, it was only a matter of time before I paired it with ice cream.

But this? This is made even more special by using crushed Nutella Chocolate Chip Cookies as the pie crust. Oh yes. You can’t escape the Nutella love in this recipe…

ingredients:
4 cups crushed Nutella Chocolate Chip Cookies (recipe here)
2 Tablespoons butter, melted
1/2 gallon (8 cups) vanilla ice cream (recipe here)
6 oz (half a jar) Nutella

First let the ice cream sit out to soften while you prep everything else. Then, it’s a shame, but yes you must crush those delish Nutella Chocolate Chip Cookies instead of eating them whole.

Using a rolling pin and a lot of aggression – or a food processor, whatever – crush the cookies down to crumbs.

Mix the crumbs with the melted butter and press into a 9″ springform pan.

In a bowl stir the Nutella into the softened vanilla ice cream. Do you know why it says right on the Nutella jar “Do not refrigerate”? Because it solidifies. So when you start stirring in the Nutella and you freeze this pie, the Nutella will basically turn into a chocolate chip-like swirl and you will be amazed at the delicious wonderment.

Stir in the Nutella just enough to get a nice swirl then pour the ice cream on top of the Nutella Cookie crust, spreading it in the springform pan, evenly.

Cover with plastic wrap and freeze. When you are ready to serve, unhinge the springform pan and let loose!
