O.G.’s Bacon wrapped Meatloaf
How has O.G. Original Grandma lived for so long? Eating a lot of things that are bad for you, wrapped in more things that are bad for you. If trying to emulate her health regimen, this Bacon Wrapped Meatloaf is for you.
As if all that meat wasn’t enough, she had to go and wrap it in bacon. Heart attack? Yes. But you don’t live long without taking a few risks and living your best life.
O.G.’s Bacon wrapped Meatloaf
Ingredients:
1-1/2 pounds ground beef
3/4 cup bread crumbs
3/4 cup milk
2 eggs
1 teaspoon salt
1/4 teaspoon ground black pepper
5 slices of bacon
1 tablespoon brown sugar
Instructions:
Preheat oven to 350 degrees.
In a large bowl combine ground beef, breadcrumbs, milk, eggs, salt, and pepper.
Once combined, press into a loaf pan.
Lay the strips of bacon across the top of the meatloaf. Trim or tuck in the edges on the sides.
Sprinkle brown sugar onto the bacon.
Bake in the oven for 1 hour or until juices are clear.
Let sit for 5 minutes, then serve.
my question is – will the kid take this in his lunch box tomorrow? cuz to me, that meatloaf makes one helluva sandwich!
my vegetarian husband would have a heart attack, but…yum…

hi 🙂 made this for my hubby. bacon on the top was a hit. it is heavy though. might have been because i just had this with lots of rice lol.
This meatloaf is great – I’ve made it a couple of times. 15% Bristol Farms ground beef with applewood bacon on top. I made it Italian style, formed by hand into a loaf on a broiler pan – thank you!!
