Oven Baked Chicken Fingers
My kids love chicken fingers, as most do. This is an effort to try and get a healthier version inside of them. They don’t eat fast food. So this is as fast as it’s gonna get for us.
ingredients:
2 boneless chicken breasts – cut into strips
3/4 flour
salt
pepper
1 egg
3 Tablespoons milk or water
1 cup seasoned breadcrumbs
1/4 cup parmesan cheese
Preheat the oven to 400 degrees. Line a baking sheet with nonstick foil or parchment.
Set up a work station – that is – three deep dishes, side by side. In the first dish, put the flour and season with some salt and pepper. Second dish, whisk the egg with the milk. Third dish, mix the breadcrumbs and the cheese.
Now go down the line and take your chicken strip, dip in the flour (make sure you shake off the excess or your batter won’t stick!!), then the egg, then roll in the breadcrumbs. Put on your baking sheet.
Once you are done with your assembly line, pop that tray in the over for 10 minutes. Turn the chicken strips over, and cook for another 10-15.
Kids love these, and especially like to dip them, so pull out the ketchup, mustard and bbq sauce!
I love to make a big batch of these (chicken or fish), flash freeze ’em on cookie sheets, and pop ’em in a ziploc. Then I can take out three or four at a time and cook them in 10 minutes. Easy peasy!
MY SON LOVED THESE!! So did my mom. I used these whole wheat panko crumbs that taste pretty cardboardy on their own, but they did well in this recipe! Wonderful recipe, as usual :). They even tasted good cold straight from the fridge.
