Pancake Mix Muffins
Do you ever find yourself staring at a box of pancake mix and think, I wish I had muffins? True, it’s not an ordinary thought but sometimes you want what you want.
I normally make everything from scratch but one time a year I head to Trader Joe’s for their fall pumpkin-extravaganza. The aisles are lined with pumpkin products and the Gluten-Free Pumpkin Pancake Mix is to die for, you’d never know it’s gluten-free! It makes the most amazing pancakes but I also use it for waffles and I even use it to make homemade funnel cakes.
I usually load up and fill my cart with boxes on boxes because as with all TJ’s seasonal products they disappear quickly. Since I had so many boxes I decided to use some to make some morning muffins.
You can use any pancake mix for these, plain is fine. Try mixing in fruit or nuts instead of chocolate chips. For me, it’s the pumpkin flavor that makes these extra special.

Pancake Mix Muffins
Ingredients:
2-1/2 cups pancake mix
1/3 cup brown sugar
3/4 cup whole milk
1 egg
3 tablespoons unsalted butter, melted
1/2 teaspoon vanilla
1 cup chocolate chips
Instructions:
Preheat the oven to 400 degrees. Prep a muffin tin with liners.
In a large bowl, whisk together pancake mix and sugar.
Make a well in the center of the dry ingredients and stir in the milk, egg, butter, and vanilla.
Fold in the chocolate chips.
Spoon into the prepped pan.
Bake for 15 minutes. Let cool on a wire rack.
Why the extra brown sugar?
Made it! Delicious!! Fluffy! Airy! Light and tasty with gooey melted chips!
Can you add pumpkin purée?
I bought too many boxes of pancake mix (which I love) but wanted to see if I could make anything else. They were perfect!! I added a streusel topping and some extra spices. They were maybe a touch too sweet for my palate but great texture.
Made these today, and they came out really nicely! I added a banana because my mix was a little dry, yum yum!
I doubled the recipe to use the entire box and it made 24 muffins perfectly, with two tweaks: I did not double the brown sugar, and replaced half of the milk with fresh pumpkin purée. Delish!
Just made these this morning and they are delicious! I only had peanut butter chips and I can imagine them with the chocolate chips for next time. Thank you for a great gluten free option that tastes wonderful?
I made these but used cranberries instead of chocolate chips. Not bad.
