Pasta Salad with Buttermilk Fried Chicken
I make this Pasta Salad with Buttermilk Fried Chicken quite a bit but never thought to put the recipe up until I started doing a series of Chicken 2 Ways meals for the kids.
Whenever I make Buttermilk Oven-Fried Chicken, I find that leftovers make a perfect addition to pasta salad. There are a lot of ingredients to the dressing, but DON’T let that deter you, the flavor is exactly what you are looking for. Don’t be tempted to go the bottled dressing route, it’s full of preservatives and so much oil that it’ll never stick to the pasta anyway.
The scratch dressing, pasta and veggies and fried chicken all combine to make this a great summertime meal or picnic side!
Pasta Salad with Buttermilk Fried Chicken
Ingredients:
salad ingredients:
8 ounces of pasta
1-1/2 cups cooked broccoli
1 cup chopped green/red/yellow peppers
1/4 cup sliced olives
2 cups buttermilk oven-fried chicken, cooked and cut into cubes
dressing ingredients:
4 Tablespoons red wine vinegar
1 teaspoon salt
freshly ground pepper
6 Tablespoons olive oil
2 cloves garlic
3 Tablespoons dijon mustard
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon oregano
Instructions:
Boil the pasta according to package directions. Drain, but do not rinse.
In a large bowl toss the pasta, broccoli, peppers, olives and chicken.
Whisk all the dressing ingredients in a bowl and drizzle over the pasta salad ingredients.
Chill before serving.

I had been dreaming about a pasta salad dressing and decided to give this a try… and it was delicious Well in the bowl when I mixed the dressing it was too tarty and sour… eh, but when tossed with the salad, fabulous!
Yeah, it definitely needs something to stick too. I wouldn’t recommend drinking it.
I was thinking of making this with a rotisserie chicken. WOuld that work just as well?

I make a similar pasta salad, but this looks better than mine, so I’ll have to try it this summer!
