Pea Salad
Growing up I was NOT a fan of peas, yet there they were every other night on my dinner plate. As I grew up my palate changed and I learned to love peas. Fresh or frozen, there’s something substantial about them that makes a for a good side dish. Even if you still aren’t a fan, there are so many ways to dress them up to make them more palatable. Peas are your friend. Give peas a chance.
This is a fresh take on a summer salad. Creamy, yet crisp – pea salad is a great addition to a summer picnic. Peas be with you.
ingredients:
16 ounces peas
1/4 cup onion, diced
2/3 cup mayonnaise
2 teaspoons apple cider vinegar
1 teaspoon brown sugar
1/4 teaspoon celery seed
1/4 teaspoon garlic salt
fresh ground pepper
If the peas are frozen, thaw them in a colander and drain.
In a bowl combine the mayonnaise, apple cider vinegar, brown sugar, celery seed, garlic salt and pepper. Stir together until combined then pour over the peas and onions, tossing to coat.
Keep in the fridge until you’re ready to serve!
