Peanut Butter Chip Chocolate Chunk Cookies
My friend Mariko who blogs at thelittlefoodie is a kindred spirit. We like and dislike the same things to the point where it makes me laugh. When I was in Hawaii last week she took me on a wonderful day trip full of eating and I made her a promise that I would send her something that she just can’t get in Hawaii, Trader Joe’s goodies.
While Trader Joe’s is within arms’s reach over here (to the over saturated point that there are 4 of them within five miles of me) it’s still the one Mainland thing that hasn’t infiltrated the islands. When you visit Hawaii, you simply cannot arrive without omiyage aka travel gifts. (This comic from Deb Aoki says it all.) The reasonably priced goods full of creative flavors are a must to bring when you visit family and friends. Trader Joe’s Nuts, cookies, salty and sweet snacks are all the rage with locals and all sadly inaccessible.
When I push my cart down the aisles at TJ’s I always get inspiration for new recipes. The last trip to the store, I came across a bag of Peanut Butter Chips shelved right next to the Chocolate Chunks as if it was destiny. I knew a combo cookie was in my future.
The cookie is a standard chocolate chip cookie base which allows the peanut butter chips to shine on their own. Just a touch of peanut butter flavor and a tipped balance of chocolate makes each bite feel like you’re eating the tiniest peanut butter cup. I will definitely be sending her a bag of each of these key cookie ingredients, however I won’t be sending her the cookie only because I ate them all. Sorry, Mariko you’re on your own.
Peanut Butter Chip Chocolate Chunk Cookies
Ingredients:
2-1/2 cups all-purpose flour
1 teaspoon baking soda
pinch of kosher salt
1 cup (2 sticks) unsalted butter, softened
1 cup brown sugar
3/4 cup white sugar
1 teaspoon vanilla
2 eggs
3/4 cup peanut butter chips
1 cup chocolate chunks
Instructions:
Preheat the oven to 350 degrees and line baking sheets with silpats.
In a large bowl whisk together the flour, baking soda and salt. Set aside.
In the bowl of an electric mixer cream the butter, brown sugar and white sugar.
Add the vanilla and the eggs until combined.
Spoon in the flour until the dough comes together.
Fold in the peanut butter chips and chocolate chunks, incorporating them throughout the mixture.
Form the dough into Tablespoon-sized balls and place on the prepped sheets 2 inches apart. You will get about 4 dozen cookies depending on the size you make them.
Bake for 10 minutes until browned, depending on your oven. Let cool on a wire rack.
