Peanut Butter Filled Chocolate cookies
Chocolate cookies with a sweet peanut butter center. Best combo in the world.
ingredients:
2 cups all-purpose flour
1/2 cup cocoa powder
1/2 teaspoon baking powder
1/2 teaspoon baking soda
pinch of salt
3/4 cup (1-1/2 sticks) unsalted butter
3/4 cup sugar
3/4 brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups chocolate chips
Filling ingredients:
1/3 cup brown sugar
1/2 cup peanut butter
In a bowl whisk together the flour, cocoa powder, baking powder, baking soda ans salt. Set aside.
In the bowl of an electric mixer cream the butter, sugar and brown sugar.
Add the eggs and vanilla. Then add the dry ingredients until combined and stir in the chocolate chips.
Wrap the dough in plastic wrap and chill.
Preheat the oven to 350 degrees. Prep baking sheets with silpats.
For the filling, in a small bowl stir together the brown sugar and the peanut butter.
Take the chilled chocolate dough and form small balls and flatten them out. Add a teaspoon of the peanut butter filling and pinch to close. Place on the baking sheets and flatten slightly.
Bake 12-15 minutes, depending on your oven. Let cool on wire racks.

I make these cookies ALL THE TIME !!! They are AWESOME ! never a bad batch !
I’ve made these twice and both times the cookies spread out very wide and thin. I chilled the dough for more than an hour (it still didn’t seem very stiff, though). They don’t have a nice, thicker shape like yours do. Any ideas?

Hm. You need colder dough. The only thing I could say is maybe mound the dough up? If your problem is the spreading, get it into more of a ball shape and see what happens.
