Pear and Ginger Scones

When my mom and I go out for tea, she likes the savory treats so that leaves me with all the sweets! Just how I like it.

Every tea is different but scones are always a main component. Making them at home is so easy and you can come up with all kinds of flavor combinations. Pear and ginger seemed like a great combo and just right for a party or an afternoon snack!

ingredients:
2 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
pinch of salt
1/2 cup (1 stick) butter, softened
1 egg
1/2 cup milk
1 teaspoon vanilla
1 cup dried pears, chopped
1/4 cup candied ginger, chopped fine

I like to chop the pears and ginger up as much as I can, only because both are sticky but if you like it chunky, leave it chunky!

Preheat the oven to 400 degrees. Prep a baking sheet with a silpat.

In a bowl whisk together flour, sugar, baking powder and salt.

Add the butter, egg, milk and vanilla until just combined.

Fold in the pears and ginger.

This mixture is fairly sticky and I deal with it in an unceremonious way – just plop the whole thing down on the silpat and spread it around. You can be more professional about it, but the rustic-ness (laziness?) is quite nice. Sprinkle sugar crystals over the top of the dough.

Bake for 20 minutes, then cut into pieces and let cool on a wire rack.
