Peppermint Patty Brownie Cupcakes

Since I have a lot of leftover peppermint patties, I thought I’d try these brownie cupcakes that I saw in Martha Stewart’s Cupcake book. I made adjustments to suit me and while they were by no means as lovingly food stylized as hers, they were certainly delicious.

ingredients:
8 ounces chocolate chips
1 stick butter
1 cup sugar
3 large eggs
1/2 teaspoon vanilla
1/2 cup all purpose flour
1/4 cup cocoa powder
12 mini York peppermint patties

Preheat oven to 350 degrees. Prep a cupcake pan with liners.

In a double boiler, melt the chocolate chips and the butter, stirring constantly. Once melted and combined, carefully take off the heat and let cool for 1 minute. Whisk in the sugar until smooth. Then quickly add the vanilla and eggs, whisking constantly, you don’t want them to cook.

Carefully add in the flour and cocoa, just whisking until combined.

Now, spoon a small amount just about 1 Tablespoon into each liner. Place one peppermint patty on top (unwrap them, HELLO) and then top with more batter – covering the patty completely.

Bake for approx 30-35 mins depending on your oven. Let cool on a wire rack. The best thing about these is that they don’t require frosting and make great gifts to give out that are so easy to transport and package. Oh and they taste great too.

    I just signed up to do a “bake for the troops” event – do you think these would pack, ship & last well? THe packages get sent to US Military in combat zones. I’d like to be able to send something other than cookies…any ideas???

    These would be perfect – they are sturdy, and hold up really well when jostled around. They are also a nice variation on your typical brownie!

    Use the MINI peppermint patties for REGULAR sized cupcakes.

  7. Hmm lucky you clarified about the mini peppermint patties. I was sitting here thinking “woah, imagine how big her cupcakes are that the patties fit in them!” I don’t think I have seen any mini ones down under or I’d make these.

    I still have to try these out…the soldier I baked for couldn’t have chocolate! That was a challenge!!!!!

    I was also thinking about trying these with a Rolo candy instead of the peppermint patty. Its a rainy day here on the East coast and is supposed to be like this for days so maybe I’ll get around to it today!

    Hey- I tried these today with junior mints and mini cupcakes. The taste is great, but the junior mints totally melted in – you can’t see them at all if you cut one of the brownies open. Oh, and the brownies totally stuck to the wrappers! Next time, I’d just bake them straight in the tins, then sit them in the wrappers decoratively.
