Pikachu Cookies

It’s my nephew’s birthday and he loves Pokemon which makes sense because Pokemon is awesome. Pikachu is pretty much the face of Pokemon and a fan favorite so for his party I decided to make adorable little Pikachu cookies!

Francesca4me makes a perfect little Pikachu cutter that captures his likeness exactly. Some yellow dyed dough and a few details and your Electric type Pokemon is ready to go!

Pikachu Cookies

Ingredients:

3 cups all-purpose flour
1 teaspoon baking powder
pinch of salt
1 cup (2 sticks) unsalted butter
1 cup sugar
1 egg
2 teaspoons vanilla
yellow food gel dye
black icing
red icing
pink icing
white icing

Instructions:

In a bowl whisk together the flour, baking powder and salt. Set aside.

In the bowl of an electric mixer cream the butter and the sugar. Add the egg, vanilla and yellow food gel dye.

Add the flour mixture until combined and the color is incorporated. When it pulls away from the sides of the bowl, the dough is ready.

Separate into two pieces and wrap the dough in plastic wrap. Refrigerate until you are ready to use.

Preheat the oven to 350 degrees. Prep baking sheets with silpats.

Pokemon Cookie Cutter

Roll out the dough to about 1/4 inch thick. Flour the cutter and cut out the dough. Transfer onto prepped baking sheets.

Bake for 10 minutes, let cool on a wire rack.

When the cookies are completely cool use a #3 tip and black icing to fill in the eyes, nose and top of the mouth. Also use the black to fill in the tip of Pikachu’s ears.

With the red icing and a #3 tip, fill in the cheek area.

Use pink icing and a #3 tip for his tongue.

Finally go in with a #2 tip and white icing to add pupils to the eyes.

Once the icing has set the cookies are ready to serve.
