Pineapple BBQ Chicken Sandwiches
When you have a long day of work, the slow cooker is your best friend—especially when you want to minimize your time in the kitchen. This recipe is so simple, once you set it up all you have to do is serve.
Pineapple is my favorite fruit because it works so well as both savory and sweet. Here it adds a tang and sweetness to BBQ sauce and adds just the right touch of Aloha. This no-effort dish makes for a good hearty meal after a long day.
Pineapple BBQ Chicken Sandwiches
Ingredients:
you’ll need:
1 onion, sliced
4 boneless chicken breasts
4 buns
sauce ingredients:
1 cup ketchup
1/2 cup pineapple, diced fine
1/2 cup pineapple juice
1/4 cup orange juice
2 tablespoons apple cider vinegar
2 tablespoons brown sugar
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon cumin
1/4 teaspoon onion powder
freshly ground pepper
1 tablespoon cornstarch + 1 tablespoon water to make a slurry
Instructions:
Step 1: Place the sliced onion into the bottom of a slow cooker.
Step 2: Place the chicken breasts on top.
Step 3: In a bowl, stir together the ketchup, diced pineapple, pineapple juice, orange juice, apple cider vinegar, brown sugar, garlic, salt, cumin, onion powder, and freshly ground pepper. Stir in the slurry.
Step 4: Pour the sauce over the chicken. Cook for 8 hours on low.
Step 5: Use two forks to shred the chicken, then serve on buns.
