Pink Hello Kitty Cupcakes

The only thing better than a cupcake is topping it with a chocolate Hello Kitty head. The only thing cuter than a chocolate Hello Kitty head cupcake is to make it PINK.

I made these for a little girl’s birthday and while there was no specific themed request, I took it upon myself to make them Hello Kitty and pink as can be. Perhaps I’m projecting my own birthday dreams onto this poor child? Maybe, but she loved them and that’s all that matters.

cupcake ingredients:
3/4 cup (1-1/2 sticks) butter
1-3/4 cups sugar
3 eggs
1 teaspoon vanilla
2-1/4 cups cake flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1 cup buttermilk
pink gel food coloring

vanilla buttercream
8 ounces of chocolate
heart quins

Preheat oven to 350 degrees. Prep a cupcake pan with liners.

In a medium bowl, whisk the cake flour, baking powder, baking soda and salt. Set aside.

In the bowl of an electric mixer cream the butter and sugar until fluffy. Carefully add the eggs one at a time until incorporated, then add the vanilla.

Alternate the buttermilk with the dry ingredients until combined. Stir in the pink gel food coloring until you get a nice pinkish hue.

Spoon the batter into prepped liners, bake 15-17 minutes depending on your oven. Let cool on a wire rack.

To make the chocolate Hello Kitty heads, melt the chocolate in a double boiler and spoon it into the mold.

Tap the mold several times until air bubbles come to the surface.

Place the mold in the freezer until set, approximately 10 minutes.

Turn out the chocolates and place onto the frosted cupcakes. Sprinkle heart quins for extra decoration.

There you have it, pretty pink Hello Kitty cupcakes!
