Pot Roast Tacos
The kids are growing up, as is their taste in literature and right now both kids are very into the Lemony Snicket books. The tales are pretty disturbing but per the usual, the thing that stood out most to my kids was the references to food!
Per the story, Count Olaf asked for Roast Beef for dinner but was instead given Pasta Puttanesca. Believe me Count Olaf doesn’t deserve Roast Beef and while there’s nothing wrong with pasta, the roast beef really stood out in my mind. I thought it would be especially good if served as one our favorite family dishes, tacos!
Dining and drawing is something I like to encourage and as the Kid worked on Lemony Snicket drawings, I worked on dinner. The tacos were a perfect culmination of discussing the book and enjoying a hearty meal.
Pot Roast Tacos
Ingredients:
3-4 lb chuck roast
1 onion, chopped
2 carrots, chopped
2 stalks celery, chopped
1 clove garlic, minced
2 Tablespoons Worcestershire Sauce
2 Tablespoons brown sugar
1 Tablespoon chili powder
1 teaspoon cumin
1 teaspoon salt
freshly ground pepper
6 ounce apple juice
flour tortillas
guacamole
