Pulled BBQ Chicken
BBQ sauce is full of those sweet, sticky flavors that keep you coming back for more. Over pulled chicken it’s even better because the sauce is throughout the dish in every single bite. Making it in a slow cooker just adds to the flavors and makes cooking dinner a breeze.
With all the kid’s classes, homework and activities this is the kind of dinner we eat during the week, fast, simple and delicious.
Pulled BBQ Chicken
Ingredients:
you’ll need:
6-8 pieces boneless chicken (thighs or breasts)
mini rolls (for sliders) or buns (for regular size)
sauce ingredients:
1 cup ketchup
3/4 cup orange juice
juice of half a lime
3 Tablespoons apple cider vinegar
1/4 cup brown sugar
1 clove garlic, minced
1/2 teaspoon salt
1/2 teaspoon cumin
1/8 teaspoon onion powder
pinch of cayenne
freshly ground pepper
Instructions:
Place the chicken in the crock pot.
Mix all the sauce ingredients together in a small bowl, then pour over the chicken. Cook on low for 4-6 hours.
When chicken is cooked through, use two forks and ‘pull’ it.
Serve the pulled chicken on a bun with lettuce and tomato or on small buns for sliders.
