Pulled Guava Jelly Chicken

Buying a whole chicken is much more affordable than piece by piece. When cooking in a slow cooker why not use a whole chicken, giving yourself minimal work and maximized savings?

Guava jelly adds island flavor to this dish but it can easily be made with passion fruit, guava jam, whatever Hawaiian spread you happen to have. Cooked down slowly over hours, this pulled chicken is a dream and a real time saver.

Pulled Guava Jelly Chicken

Ingredients:

1 whole chicken
1 jar (10 oz) guava jelly
1/3 cup apple cider vinegar
1/2 cup orange juice
1/3 cup soy sauce
1/4 cup brown sugar
1 clove garlic, minced
1 teaspoon salt
1/2 teaspoon pepper

Instructions:

Step 1: In a small bowl mix together the guava jelly, apple cider vinegar, orange juice, soy sauce, brown sugar, and garlic.

Step 2: Place the chicken in the slow cooker. Pour the jelly mixture on top, and season with salt and pepper.

Step 3: Cook on low for 8 hours.

Step 4: Use two forks to shred the chicken. Discard the bones, to serve.
