Pumpkin Chocolate Chip Donuts
It’s always sad when your friends move to another state, luckily with social media they’re never more than a click away. My friend Amy left LA and while I miss her a lot, I have something to remember her by – her donut pans! Now everytime I make donuts I’ll think of her.
Where she lives now there are actual seasons, not that I’d ever complain about LA’s beach weather in December but she’s enjoying changing leaves and the beginning of real fall weather. To me, Fall means comfort and what could be more comforting than a warm pumpkin donut studded with chocolate chips.
Baked in the oven, these are quick and easy to make. A little too easy, because once you eat one you’ll find yourself craving another almost immediately. Across the country, I know Amy will be enjoying sweaters and cocoa, while I’ll be bundling up for 60 degrees on the beach. No matter, donuts can bridge any friendship.
Pumpkin Chocolate Chip Donuts
Ingredients:
1 cup canned pumpkin
2 large eggs
1/4 oil
1/4 cup whole milk
1-1/2 cups all purpose flour
1 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
3/4 cup dark chocolate chips
Instructions:
Preheat the oven to 375 degrees. Prep the donut pan by brushing generously with melted butter.
In a bowl mix together the pumpkin, eggs, oil and milk. Set aside.
In a separate bowl whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg and salt.
Make a well and add the wet pumpkin mixture into the dry ingredients. Stirring until just combined. Stir in the chocolate chips.
Spoon the batter into the prepped pans. Bake for 10 minutes.
Let the donuts cool slightly on a wire rack before serving. (makes approx. 48 mini donuts)
Total wishful thinking here but… is there a creative way to get around using a donut pan? I am not a huge donut person but these look so delicious I’d love to give it a shot.

Can you substitute using canned Pumpkin Pie Mix?
@Karen I wouldn’t suggest it, regular canned pumpkin is just as readily available.

Which oil works best? Canola, corn or vegetable oil? (Sorry I’m still learning to bake and in my limited experience it does seem to make a difference.) 🙂
