R2-D2 Peanut Butter Shortbread

Astromech droids are resourceful, but who knew they could also be delicious? These little companions are molded from high quality chocolate using a Kotobukiya Star Wars R2-D2 mold that shows off every beautiful detail.

This chocolate droid is the perfect compliment to a buttery, peanut butter shortbread cookie. Together, this cookie will rule the galaxy!

R2-D2 Peanut Butter Shortbread

Ingredients:

you’ll need:
Star Wars R2-D2 mold from Kotobukiya
8 ounces chocolate

ingredients:
3/4 cup (1-1/2 sticks) unsalted butter
1/2 cup peanut butter
1/2 cup powdered sugar
2 cups all-purpose flour
pinch of salt

Instructions:

In the bowl of an electric mixer combine the butter, peanut butter and powdered sugar. Add in the flour and salt. When the dough is combined and starts to pull apart from the bowl, it’s done.

Form the dough into a flat disc and wrap in plastic wrap. Chill for 30 minutes.

Melt the chocolate over a double boiler and pour into the R2-D2 molds. Use a toothpick to make sure every crevice is covered and then tap rapidly on a flat surface to get out all of the air bubbles.

Freeze the mold for 10 minutes until solid, then turn out into an airtight container and keep frozen until ready to use.

Prep the oven to 325 degrees. Prep baking sheets with silpats.

Roll out the chilled dough to approximately 1/4″ – 3/16″ thick. Using a 1-3/4″ biscuit cutter, cut out circles of dough and place on the prepped sheet pans. (This dough will make about 48 round cookies.)

Bake for 15-18 minutes. Take out of the oven and place on a wire rack. Add a chocolate Artoo on top of each cookie. The chocolate will melt slightly and stick to the cookie. Let cookies cool completely on the wire rack.

    Love these! I may not make these, but they make me smile.

    My kids loved the Snoopy cupcakes while watching the Thanksgiving special. They said it was the best snack EVER!! Thanks for sharing. I hope you had a good Thanksgiving.
