Rainbow Crunch Cookies
Years ago in Hawaii, I remember walking through the market (I’m pretty sure it was when Don Quijote was called Daiei so you know it was a long time ago) and I saw these pretty “Rainbow” cookies on the shelf.
The cookies were just rolled in Fruity Pebbles, no big deal, but they were so bright and colorful. It The addition of the cereal gave it a touch of fruity flavor and crunch. I’ve recreated my own version, now the only thing missing is the beaches of Hawaii.
ingredients:
2 cups (4 sticks) unsalted butter
1 cup sugar
pinch of salt
2 teaspoons vanilla
3 cups all-purpose flour
Fruity Pebbles cereal
In the bowl of an electric mixer, cream the butter and the sugar. Add the vanilla and salt until combined.
Carefully add in the flour a little at a time until combined.
If the dough is too soft, refrigerate for 10-15 minutes.
Preheat the oven to 350 degrees. Prep a baking sheet with silpats.
Take a round piece of dough and flatten it to a 2″ wide disc shape, about 1/4″ thick. Roll it into the Fruit Pebbles cereal, covering the surface.
Place on the prepped baking sheets and bake for 12-14 minutes depending on your oven.
Let cool on wire racks.
