Raspberry Jam Heart Cookies

If you x-rayed my heart I’m almost sure it would be in the shape of a cookie. No doubt a perfectly round cookie with a heart cut out. Chocolatey but not too sweet, tender and crumbly, filled with a delicate raspberry jam.

One bite of these cookies will mend a broken heart or brighten a happy one even more. Ah, the magic of cookies.

ingredients:
1 cup (2 sticks) butter
1 cup sugar
2 eggs
3 cups all-purpose flour
1/3 cup cocoa powder
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt

Preheat the oven to 350 degrees. Prep baking sheets with parchment or silpats.

In a bowl, whisk the flour, cocoa powder, baking soda, baking powder and salt. Set aside.

In the bowl of an electric mixer cream the butter and sugar. Add the eggs until combined.

Slowly add the flour mixture until incorporated.

Put the dough in the fridge for 10-15 minutes so that it’s easier to roll out.

Roll out the dough to about 1/4″ thick. Use a 2-1/4″ biscuit cutter to cut round shapes. In half of the circles use a heart cutter to cut a heart out of the center of the circles. Transfer both onto the prepped baking sheets.

Bake for approx 10 minutes depending on your oven. Let cool on a wire rack.

Using an offset spatula, spread the raspberry jam onto the flat side of the circle cookies. Top off with the heart cut out cookies to complete the sandwich and serve.

    mmm these remind me of those knott’s berry farm jam shortbread cookies…but in chocolate! 🙂
