Raspberry Ribs

The crock pot is your best friend, you can count on it to work all day so that you can get more important things done. Crock pot ribs are a great way to get an impressive dinner on the table without lifting a finger.

Fresh raspberries make a surprisingly good base for this fragrant dinner dish. The slow cooking allows the flavors to simmer and mix together, and fruit adds just the right amount of acid and brightness to bring savory dishes together, making these ribs fall right off the bone.

Raspberry Ribs

Ingredients:

1 rack pork ribs
1 pint raspberries
1 cup orange juice
2 tablespoons olive oil
2 tablespoons red wine vinegar
1 tablespoon brown sugar
1 tablespoon soy sauce
1 tablespoon shallot, minced
2 cloves garlic, minced
salt and pepper

Instructions:

In a bowl lightly mash together the raspberries, orange juice, olive oil, red wine vinegar, brown sugar, soy sauce, shallot, and garlic.

Place the ribs in the crock pot and season with salt and pepper.

Pour the sauce over and cook on low for 8 hours.
