Lemon Mascarpone Frosting

Mascarpone frosting is my most popular frosting recipe so I always try to think up new ways to incorporate flavors. This cloud-like frosting only benefits from the addition of citrus, making it sweet and airy like a lemon dream.

Lemon Mascarpone Frosting

Ingredients:

8 ounces mascarpone cheese
1 cup powdered sugar
pinch of kosher salt
2 Tablespoons lemon juice
Zest of one lemon
1 -1/2 cups heavy whipping cream

Instructions:

In a medium bowl combine mascarpone cheese, powdered sugar, salt, lemon juice and lemon zest. Stir together until smooth, and set aside.

In the bowl of an electric mixer beat whipping cream until stiff peaks form, making sure you don’t overdo it, the last thing you want is for it to curdle.

Gently fold the whipped cream, into the mascarpone mixture until combined. Turn the mixer on high to whip slightly until airy, then use immediately or keep in the fridge until ready to serve.

    I recently found your blog randomly while googling for something entirely unrelated. Lucky! I have been checking every few days to see what tempting treats you were coming up with, but this is the one that finally suckered me into trying out one of your recipes. This icing is wonderful! My husband remarked that it was like lemony whipped cream, which I suppose it is. It is so tasty that I must come up with more uses for it, hopefully some that won’t leave me with 24+ cupcakes whispering my name every time I go near the kitchen. Kudos!

    @MC It will keep in the fridge for about 2 days (that’s my max) and room temp for about an hour. Because of the whipped cream it doesn’t last long – I prefer to keep it in the fridge as long as I can.

    That looks so good! I want to try this, the only thing is that I am having a difficult time finding the mascarpone cheese, would it be OK if I substitute it with cream cheese?

    @Bren You could but you will not get the same light consistency.

    Yes as long as it’s kept refrigerated!

    Yes! Just keep in mind it’s delicate, so putting heavy fruits on top may weigh it down a little bit.

    It holds up well only if you keep it refrigerated.
