I love the Williams Sonoma Star Wars cookie cutters, they’re so versatile I’ve made so many different things like Vader Egg Salad Sandwiches, Yoda Oreos and Boba Fett ice cream sandwiches, just to name a few. I loved the Stormtrooper cutter but wanted to find a special use for it besides the run of the mill sugar cookie, so I decided to do a take on a dessert smores.

I baked chocolate cupcakes, filled them with marshmallow filling topped off with chocolate frosting and homemade Graham Crackers in Stormtrooper form. Thus, SMORESTroopers cupcakes were born! These are definitely the cupcakes you’re looking for.

SmoresTroopers cupcakes

Ingredients:

1 cup (2 sticks) unsalted butter
2 cups sugar
2 eggs
1 teaspoon vanilla
1 cup whole milk
3/4 cup cocoa powder
2 cups flour
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt

marshmallow fluff
chocolate frosting
homemade Graham Crackers

Instructions:

Preheat oven to 350 degrees. Prep a cupcake pan with liners.

In a medium bowl whisk together the flour, cocoa powder, baking powder, baking soda and salt.

In the bowl of an electric mixer cream the butter and sugar until fluffy.

Add the eggs, one at a time then add the vanilla.

Alternate the flour mixture and the milk until combined.

Spoon the batter into the prepped liners. Bake the cupcakes for 15-17 minutes depending on your oven. Let cool on a wire rack.

When the cupcakes are cooled use a paring knife to cut out a well in the center and fill with marshmallow fluff.

Frost the cupcakes with chocolate frosting, then place a homemade Stormtrooper graham cracker on top to serve.

    I made these today and they were so frakking good! I took them to a dinner and the FIL was amazed at how delicious they were – and then confessed to not being a sweets person. There is no higher compliment, IMO. The graham crackers are pretty tasty all on their own – I don’t see us buying too many more of the boring square ones when we can have SW shaped ones without all the junk in them!! Thanks for another great recipe!!
