Root Beer Cupcakes
My family had a gathering to celebrate my Grandpa’s birthday/1 year anniversary of his death. To make the most out of sad times, I made root beer cupcakes. Root beer was one of my Grandpa’s favorite things, I’m almost sure all the soda he drank is what kept him alive for so long.
Root beer in a cake is the best way I could think to celebrate the man that took care of me for so many years. I think my Grandpa would have loved it.
Root Beer Cupcakes
Ingredients:
3/4 cup (1-1/2 sticks) unsalted butter
1-3/4 cups sugar
2-1/4 cups cake flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
pinch of salt
3 eggs
2 teaspoons vanilla extract
3/4 cups root beer
1/4 cup whole milk
Chocolate Root Beer Frosting
Instructions:
Preheat oven to 350 degrees. Prep a cupcake pan with liners.
In bowl, whisk together the cake flour, baking powder, baking soda and salt. Set aside.
In the bowl of an electric mixer, cream the butter and sugar until combined. Add the eggs one at a time, then the vanilla extract.
Alternate the flour mixture with the root beer and milk until you get a nice smooth batter.
Fill your prepped cupcake pan (should make 24 cupcakes) about 2/3 full.
Bake for approx. 15 minutes depending on your oven. Let cool on a wire rack.
Once cooled, frost with Chocolate Root Beer Frosting.
I love your recipes, especially the ones involving root beer. So have you ever seen the root beer extract at the grocery store? I’ve been tempted to buy it and try it for a cookie recipe I found somewhere else online…I don’t remember, but nonetheless–they have root beer extract.
